Nasi Lemak & Peas-Tofu Masala

Things Needed:

For the Rice:

Thailand Fragrant Rice 1 Glass,Coconut Milk,Pandan Leaves,Ginger & Garlic paste.

For the Masala:

Big Onion 1,Tomato 1,Ginger & garlic paste,Fennel seeds powder,Garam masala,Phav bhajji masala,Kasoori methi,Chilly powder,coriander powder,Lemon,A cup of green peas and 1 tofu,cooking oil and Salt to taste.

Method:

How to prepare rice:

  1. Just rinse the rice once and add 2 glasses of coconut milk(1:2 proportion) to the rice.
  2. Add a 1/2 tsp of ginger and garlic paste to the same.
  3. Add some salt to taste and take a leaf of pandan and tie it like a knot and add it to the the same.
  4. Switch on the rice cooker.

How to prepare masala:

  1. Switch on the pan and pour some oil into it.
  2. Once the oil is hot add the chopped onions
  3. When it is golden brown add the tomato's and add some salt to cook quicker.
  4. Add 2 tsp of ginger and garlic paste to it.
  5. Now add in the sliced tofu pieces and let it turn golden brown.
  6. Now add in the peas and a tsp of garam masala,fennel seeds powder and phav bhaji masala.
  7. Add 1 tbsp of chilly powder and 2 tbsp of coriander powder.
  8. Add some water and let all the ingredients cook well.
  9. Finally when all is cooked sprinkle some kasoori methi for the final touch.
  10. If you prefer we can squeeze a lemon in the end.

Tip:

Nasi lemak is best when cooked in Electric rice cooker only.It can be served with cucumber too.Try it!!!

Tofu & capsicum Vege

Things Needed:
Red Capsicum(3),Tofu cubes or paneer cubes,Chopped big onion(1),Chopped tomato(1),Ginger & garlic paste,Phaav bhaji masala,Garam masala,Kasoori methi,cooking oil and salt to taste.

Method:
  1. Pour some oil in the pan and add the onions.
  2. Once its golden brown add the ginger and garlic paste(1tbsp)
  3. Now add a cup of tofu cubes or paneer cubes and keep tossing,once its golden brown,
  4. Add the chopped capsicum.
  5. Add some salt and 2 tbsp of phaav bhaji masala and pinch of garam masala to it.
  6. Keep tossing without sticking to the pan.
  7. Once all the ingredients are half cooked add the tomato's and let it cook.
  8. Finally once all is cooked sprinkle some kasoori methi on to it.

We can add some chilly powder if we want it spicy.A squeeze of lemon over it also does the magic to your taste!!!This can be used as a side dish with any rice variety or you can serve it with chappathi!

Toor Dal balls in curry

Things Needed:
Bengal gram dal,Toor dal,2 big onion sliced,2 big tomato sliced,cumin seeds,Fennel seeds,fenugreek,curry leaves,chopped red chillies(2),cumin powder,Ginger & garlic paste(2tsp),Chilly powder ,Daniya powder,Salt to taste and cooking oil,Tamarind water,turmeric powder.

Method:

  1. Take equal amounts of both dals and let it soak in water for atleast 4 hrs.Once its soaked well grind it into a fine paste without adding any water.
  2. Add 1 big onion finely chopped,1tsp of cumin seeds,some curry leaves,red chillies,ginger garlic paste,1 tbsp of chilly powder to the grinded paste.Add some salt to taste and mix them well.
  3. Make the mixture into medium sized balls.
  4. Pour oil in a kadai and deep fry the balls and keep them aside.
  5. Now in another pan add 2 tbsp of oil and throw in some cumin seeds,fenel seeds,fenugreek seeds and some curry leaves.
  6. Now add some sliced onion(big or small) once its golden brown add the tomato's and salt to taste.A tsp of turmeric powder also to it.
  7. Now pour 4 glasses of water and add 1 tbsp of chilly powder and 3 tbsp of daniya powder(According to our thickness preference),1 tsp of cumin powder and bring it to a boil.
  8. Then add a small cup(according to your sour taste) of tamarind water and let it boil.
  9. Once the raw smell is gone add in the balls to it.Sprinkle some chopped coriander leaves and serve it.

This is a best combination for plain rice varieties.

Hot & Sour soup

Things Needed:

Corn Flour,Dark soya sauce,Vinegar,Salt,Aginomotto,Shredded carrot,Finely cut cabbage,Thinly sliced mushrooms,Finely chopped ginger and garlic(1tbsp),Finely chopped Green chillies(2),finely chopped onions(1 medium sized big onion),Gounded white pepper,Cooking oil.

Method:

  1. Take 4 tbsp of corn flour and add 2-3 glasses of water.Mix them well.
  2. Add a tsp of cooking oil and add the chopped green chillies,ginger and garlic and keep tossing.
  3. Now add the onions and wait till its golden brown.
  4. Add a small cup of carrots and mushrooms and keep tossing.
  5. Now add the corn flour stock and let it boil.Add the needed salt and soya sauce.
  6. Remember to keep stirring after adding the corn flour stock.
  7. Add a tsp of vinegar now and bring the soup to boil and then now add the cabbage.
  8. When the cabbage is half cooked simmer the heat and sprinkle some pepper according to your taste.
  9. Finally before serving sprinkle some finely chopped spring oinions on top and serve!

For Non -veg lovers we can add chicken stock instead of plain water.Finally add some boiled and shredded chicken pieces! Then our hot & sour chicken soup is ready!!!

Tofu & Peas masala


Things Needed:
Tofu(An extract from soya bean),Peas,2 Onions,2 Tomato's,Ginger and garlic paste,garam masala,phav bahaji masala or aamchoor powder,chilly powder,daniya powder,Sour curd,kasoori methi,cooking oil and salt to taste,Butter.

Method:



  1. Cut the tofu into cubes and just shallow fry them in the oil and keep them aside.

  2. Make the onions,tomato's into a fine paste.

  3. Switch on the pan add 3tbsp of oil and pour the above paste into the pan.

  4. Now add 3tbsp of ginger and garlic paste and some salt to taste.

  5. Add a tsp of garam masala and a 2 tsp of phav bhaji masala.

  6. Now add 1tbsp of chilly powder,2 tbsp of daniya powder.

  7. Add some water and let it boil.

  8. After sometime add the fried tofu and a small cup of fresh green peas to it.

  9. Let it cook and the raw smell vanish.

  10. Now just before switching off add a cup of sour curd and sprinkle some kasoori methi to it and mix them well.After changing it to the serving bowl add a tbsp of butter on the top.


Now our delicious tofu and peas masala is ready to served with parotta or chappathi.Red food colouring powder can be used for an appetising look.

Mutton chukka varuval(chettinad special)

Things Needed:

1/2 kg mutton,Onions,8 Dry chillies,Ginger and garlic paste,cumin seeds,fennel seeds,curry leaves,Grounded black pepper,cooking oil and salt to taste.

Method:


  1. Pour some oil into the pressure pan,throw in some cumin seeds and fennel seeds,curry leaves.
  2. Add the dry chillies and then 3tbsp of ginger garlic paste.
  3. Now we are ready to add the sliced onions,once its golden brown add the mutton.
  4. Add some water to cook and close the lid.
  5. Once its cooked,keep the fire at low heat and keep stirring and tossing until the water is all dried and the mutton is turned into a gravy stage.
  6. Finally sprinkle some grounded pepper on it according to your spiciness.

Mutton chukka is ready to be served.

Hot and sour dry Chicken

Things Needed:

1/2 kg chicken pieces,4 tbsp-Ginger and garlic paste,1 /2 tbsp-chillie powder,1 whole lemon juice,2 tsp-vinegar,a small cup of sour curd,cooking oil and salt to taste.

Method:

  1. Add all the above said ingredients except the cooking oil to the chicken pieces.
  2. Let the chicken soak along with the ingredients for atleast an hour.
  3. Once its soaked well pour some oil into the pan and throw in the soaked chicken into it.
  4. We can add a little of water if needed.keep tossing and turning in between.switch off when the chicken is cooked.Finally sprinkle some coriander leaves on it.

Our hot and sour dry chicken is ready to be served.We can add red food colouring powder for a more appetising look if needed.
